Most head and neck cancers are called squamous cell carcinomas that start developing in flat squamous cells. Squamous cells create a thin layer of tissue on the surface of the organs in the head and neck areas. The epithelium (which lies under this layer) consists of a layer of moist tissue of parts of the head and neck area called the mucosa.
